Do you have any odd quirks or rituals when it comes to poker?

I have a couple that I think most people would find strange. Before I leave to go play, I always listen to the same song (Cody ChesnuTT - Look Good in Leather) to get me into the right frame of mind to play. Also when sitting at the table I always stack my chips a specific way: In stacks of 5 by color (10 if there's not much room) and lowest to highest, right to left. Any chips that don't fit evenly into a stack are in one big stack (highest on the bottom) I play with except for my biggest chip which I use for a card protector.
I also have a drink or two before playing to calm my nerves and I've also found it makes my tells less obvoius.

10 high, or higher if I have a lot of chips. If I'm up, I like to keep my initial amount to the left side and topped with a chip so I know where my break even +$1 (or whatever my topped chip is). In craps I keep my starting bankroll on the closer rack, and my winnings on the top rack. I typically have denominations split by $1's to keep an easy count of what I am up/down. I'll usually go $100 / $200 splits on a $25 table, and $50 on <$25.

When playing blackjack, I like to keep all my chips in one unorganized pile

In poker, stacks of 20. Always. Industry standard. Unless you're running out of room, then you can go 40 high.

Yep. Ditto. Except when I go 40 high, it's still 20 on top of 20 (not directly on top of each other but staggered) so that I can easily rack them.

And when I play NL, I'll usually get $120 in chips (1 stack of $5 chips and 1 stack of $1 chips).
