butcher blocks/cutting boards?

Just redid my Kitchen and am ready to dump some cash on a good board or two.

at first i was set on some John Boss boards-

but after a bit of research i found this sight.

seems his boards are end grain compared to edge grain(boos).
anyone use the boardsmith??

One word...


Polyethylene.

Less than a tenth of them fancy boards and they don't collect the nastiness when you're cutting meats (especially chicken and hookers.)

yeah, i wouldn't use a wooden block. they are essentially worthless after you use them for a period of time. you can get way more use out of those plastic or glass cutting boards.

Whatever you do, don't use glass or plastic cutting boards. They dull your knife with every use.

cheaper to re-sharpen your knives than it is to keep buying wood ones after you throw them away.

While I would agree with you about glass, unless you want to clarify "plastic" for "acrylic", I'll call bullshit right now. Polyethylene has a lower Rockwell than almost any hardwood with the added benefit that it doesn't harbor bacteria like wood.

Thanks everyone-

I will be purchasing a few different kinds of cutting boards.(plastic and wood)
that said. my main board will be kept 24/7 on the counter and although it will get used all the time id like one that will also look good. right now im leaning-

a walnut 2" x 16" x 20"
groved on one side only.

Very nice!

Wood vs. plastic. The only thing I'm a stickler about is using one for meat only and another for veggies only. I don't cut veggies on the same board I use for meat.

That's only true of cheaply made and poorly maintained wood cutting boards.

Anything made by Boos Boards or the Boardsmith can be passed down to your grandchildren with a little modest care (don't soak in water, wipe them down with oil every month or so). If you somehow nick one too deeply, you can sand it out.

Acrylic and glass will ruin your knives very quickly. End-grain maple is the way to go.

I have a Boardsmith board, but you can't go wrong with Boos, either. (Boos does make end-grain boards.)

I agree. Wooden boards are still cleaner after use than any plastic board. I used to think otherwise until I read about this.

First, if you're getting "deep grooves," your knife technique is wrong. And it would cause the same problem with acrylic boards, other than those that are too hard on your knives.
