Thanksgiving Dinner help

So I'm hosting Thanksgiving dinner at my place for about 10 friends. I have a friend cooking a turkey and another frying one. I have someone brining sweet potatoes, green beans and a tons of desserts. What are the other essential Thanksgiving foods?

I'm thinking: stuffing, corn, rolls, salad, cranberry sauce, mac & cheese

what else?

also, how does one make stuffing? Is there a box of it you can buy at the store?

You can buy stuffing in a box, but making it yourself is easy. Saute onions and celery in butter then add chicken stock (or turkey stock) and simmer. Add all of that to some dried bread pieces... stir to coat, and bake. You can add all sorts of things for additional flavor. Apple and sausage is really good. Cranberry and some orange zest would be good as well. Be sure to use some kind of herbs, sage, rosemary, thyme... fresh is best. With stuffing there is no limit. Use whatever bread you like.

Mac & cheese on Thanksgiving? Regular mashed potatoes are a staple on our Thanksgiving table.

yeah, we have mashed potatoes coming too, forgot. i think mac and cheese may be more a southern thing, not sure if it is needed

Since it is the south and it is probably a given but I will mention it anyway: gravy for the potatoes?

Are you doing just the meal or will you have hors d'oeurves as well? Like a cheeseball with crackers, carrots, broccoli, etc., with dip?

My essentials: moist turkey, stuffing, garlic mashed potatoes, yams, green beans and my mom's cranberry sauce. That keeps me more than satisfied.

Don't forget a steamed green veggie like asparagus, broccoli, or Brussels sprouts, to balance off all those carb-loaded side dishes. I substitute a fresh steamed veggie for the green bean casserole and nobody misses it.

cheesey potatoes are really tasty:

2 sticks butter (1/2 lb)
8 thick slices velvetta cheese
1 pint (1lb) Sour Cream
1 large onion (chopped)
1 large bag frozen hash browns

Melt butter + cheese in microwave- set aside.
Then mix frozen hash browns, onion and sour cream.
Now add butter + cheese mixture- mix well.
Put in Baking dish- bake at 350 degrees for 1 hr 15 minutes

If you opt for gravy I definitely suggest homemade gravy over can gravy.

Don't stress over it and overdo things.

Cranberries in some form are expected. Non-canned cranberry dressing can be very good and is worth the trouble. I don't like cranberry dressing but I like simply-prepared cranberries.

A simple salad is nice but it's merely a pale prelude to the main event.

I would concentrate on the stuffing. I have a chestnut stuffing recipe that most people like better than the bird if you're interested.

I make a nice cranberry dipping sauce with fresh cranberries, lemon zest, sugar, and vinegar.

I also make a lot of non-traditional dishes, like squash risotto and sweet potato vichyssoise, simply because I'm like that.

Dressing is easy. Gravy is easy. Don't let these things worry you.

Collards, don't forget the collards!

Our menu this year:

Two boneless young turkeys
honey ham
baked sweet potatoes mashed with butter and black pepper
red potatoes mashed with cream, butter, and garlic
corn bread dressing
giblet gravy
green beans
collards
purple wiggly stuff (canned cranberry sauce, old school jellied style)
assorted rye, pumpernickel, potato, and sourdough dinner rolls
pecan pie
all the sweet green tea you can drink

Last minute addition: a simple casserole of broccoli and rice smothered in sharp cheddar cheese.
