Penne W/ Vodka Sauce

I'm making this tonight .... I'm using a recipe my Aunt gave me.. I've made it before and thought it had too much of a vodka taste .. and so this time, I cut the amount of vodka in half.

How much vodka do you put in your sauce?

This recipe calls for a quart of tomato sauce and 1 cup of vodka!
Last time I had to add more parmesan cheese and there was still that alcohol taste.

Suggestions?

Here's my recipe:

Penne with Spicy Vodka Tomato Cream Sauce

INGREDIENTS
1 pound uncooked penne pasta
1/4 cup extra virgin olive oil
4 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes
1 (28 ounce) can crushed tomatoes
3/4 teaspoon salt
2 tablespoons vodka
1/2 cup heavy whipping cream
1/4 cup chopped fresh parsley
2 (3.5 ounce) links sweet Italian sausage

DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
In large skillet, heat oil over moderate heat. Remove casing from sausage and add to skillet. Cook, breaking up the meat, until brown. Add garlic and red pepper and cook, stirring until garlic is golden brown.
Add tomatoes and salt; bring to boil. Reduce heat and simmer 15 minutes.
Add vodka and cream and bring to boil. Reduce heat to low and add pasta, toss for 1 minute. Stir in fresh parsley and serve!

The recipe on FoodTV also called for a cup of Vodka.

I saw that the food network calls for a cup also...
2 tablespoons sounds more than enough. One cup is way too much. I've had it a million times in restaurants and never tasted alcohol.

add the alcohol about 15 minutes before the cream. let it cook out before you add the cream.

one cup is way too much though. i would just half it.

No.. one cup to every quart.

And I did let it simmer for about 2 hrs.. still too strong.

If anyone is using that Food Network recipe.. I think it's the one from Giada.. I woudn't use one cup of Vodka unless your making a gallon or more of sauce.
I would start out w/ a couple of tablespoons...1/4 cup tops.
