In a somewhat similar vein, Dream Theater used to cover entire albums as their encore when they played multiple dates at the same venue. They've released several of these as "official bootlegs".

Albums covered include:

Master of Puppets
Number of the Beast
Dark Side of the Moon
Made in Japan (a live cover album of a live album)

That's the first endearing thing I've heard about the band.

Tori Amos does the best cover songs.

If we're including soundtracks...

I'm Not There (OST) has some great Bob Dylan covers, including Eddie Vedder doing All Along the Watchtower.

Much like Me First & the Gimme Gimmes, The Detroit Cobras have made an entire career out of cover albums. Rachel Nagy:

Susanna Wallumrod (who generally goes by only her first name) has done a pair of astonishly good covers-only albums. Her versions are hauntingly spare, always transforming well-known pop and rock tracks into something entirely new and beautiful. Bonnie "Prince" Billy guests on some songs off her new CD.

The Malchicks' To Kill a Mockingbird is composed entirely of blues and folk covers, and it's fantastic. I can't believe how talented these two are at such a relatively young age.

Most of Scala's output has been covers, although there's usually an original song or two on their albums. Some very unique, unexpected choices to be found in their repertoire.

Robert Plant's "Dreamland" is mostly covers.

1. Funny In My Mind (I Believe I'm Fixin' To Die)
2. Morning Dew (Grateful Dead)
3. One More Cup Of Coffee (Dylan)
4. Last Time I Saw Her
5. Song To The Siren (Tim Buckley)
6. Win My Train Fare Home
7. Darkness, Darkness (Youngbloods)
8. Red Dress
9. Hey Joe (Hendrix)
10. Skip's Song

(I've attributed those that I know but I think only a couple of the tracks are original Plant).

Allison Moorer - Mockingbird
Just A Little Lovin' ~ Shelby Lynne (almost all Dusty Springfield covers)
Patti Smith - Twelve
Susanna Hoffs & Matthew Sweet - Under the Covers Vol. 1

The Postmarks - By the Numbers
This one comes out on Nov. 11th. Each song is a cover version of a song with a number in the title, one to eleven, with the 12th track being a cover of "Pinball Number Count", the Pointer Sisters' Sesame Street song. They were releasing one track a month for free on eMusic, but stopped at 8 when news of this CD was released. Some great covers of The Cure, Ride, Bob Marley and others. Can't wait to hear the final third of this album.

The Black Crowes have done the Halloween thing where they dress up and do covers. They aren't officially released, but on trader sites I know you can find one where they do a bunch of Elvis covers and they also did one where they did a bunch of AC/DC covers.

Gov't Mule did one last year where they covered the whole Houses of the Holy album. And this year for Halloween they did a whole bunch of Pink Floyd covers. The Zep one can be purchased on their site, I would imagine the Floyd one will be up there eventually.

Les Claypool in one of his various band names did a live cover of the whole Animals album by Pink Floyd, and I believe that is commercially available.

Phish did VU's Loaded as well. All 4 were released on CD. Not sure if they're still in print though.

Pussy Galore did a song for song remake of Exile on Main Street.
