For me it's more of a impact thing...When I saw reservoir dogs for the first It was so different from anything else I've ever seen (even the little things like not showing characters enter into buildings, references to key players you don't even get to see, etc...) and I was very young and it made such an impression on me.
Even today I just think it was brilliantly done from start to finish. I actually had this same feeling when watching the hateful 8 and I loved that Tarantino actually took us back to how it all got setup - I just haven't watched the hateful 8 enough times to know if it's the new king yet.
Pulp Fiction and The Revenant are up there for me as well.

To me it's the sum of: quality + nostalgia + replayability + "it" factor.
It factor mostly being that factor that just makes it "click" with us. Hard to define it beyond that but everyone should have an idea of what the "it" factor is with their personal fave.

SW Ep V The Empire Strikes Back and
Raiders of the Lost Ark
both for roughly 35 years - I still remember seeing Raiders opening weekend with my uncle and I remember a double feature with Ep IV and V that he also took me to that same year.

It really depends on my mood as several people have stated in this thread. It also depends on the definition of favorite. The movie that I was most surprised by @ the cinema was probably "The Matrix" on opening night. The favorite that I can have on in the background while doing homework or paying bills, either "Fight Club" or "Pulp Fiction." My favorites to watch with those who have not seen them before? "Shawshank Redemption" or "The Usual Suspects" or even "Confidence." Do I want to sit back and let my home cinema roar? "Saving Private Ryan" or "Heat" or "Aliens" for their memorable scenes...
