Probably Akira Kurosawa. He's the one tha that matters the most to me in seeing his complete works.
saying that... I've seen a lot of other guys' stuff too cuz of their smaller filmography.
Kurosawa is the most interesting to me. I haven't seen all his films cuz some apparently are lost but I have seen all the ones avaliable. And own all that I can on BD. That post war Kurosawa set by CC is great. Wish it was on BD. I love seeing a director grow. And that set showed me so much of his development to being the great master that he was. His variety in films and his thematic attractions in narrative. His growth and change in visual settings has always fascinated me. I'd love to see wtf those films before WWII ended were like. To see him forced and restricted to follow mandated government guidelines and such.
But honestly... I'm not a completist for most. If I am it's for guys who are more filmmakers of my lifetime. Fincher, QT, Nolan, and a few others. Mostly because it's easier to see all of their films than someone like Kurosawa. The smaller the filmography... the more possibility I am to being a completist for them.

I have most of Tarantino's films. Weird thing is I don't own Jackie Brown, which is my favorite film he made. I'm also still working on getting all of Bruce Lee's films. There are only a few of his childhood films available on DVD. There was a VCD set years ago but I passed on that.

Weird. I'm a completist in most areas of my life (certain comics, music, movie franchises, TV show releases, book sets, etc) but have never even considered being a completist with a director or actor.

Clint Eastwood and Ah-nold. I even own everything Clint has directed with the exception of Jersey Boys, which I will probably buy someday but I haven't been compelled to pay the prices I've seen it for in stores.

Lynch, Tarantino and Scorsese are the only current directors who will automatically get me into a theater seat. If I like the movie I will buy the BD/DVD, if not I don't feel the need to own the ones I don't care for.

Not really. There are some directors I have seen most of their work but, in some cases, it's only because they haven't put out that many films.

Once upon a time there were directors I revered and tried to see everything they did:
Howard Hawks (although I still have some of his silents to get to)
Billy Wilder (although I didn't get to THE EMPEROR WALTZ until 2015!)
Orson Welles
Robert Aldrich (although there are still two I haven't seen)
Sam Peckinpah
Don Siegel (although I still have a few I haven't gotten to)
Sergio Leone (not that hard to get through his filmography)
Ishiro Honda (there are only a few really obscure credits of his I haven't seen)
I'm almost finished with Chang Cheh. I think I have about ten or so to go. I think I've seen 90 of his films, the most by any one director.
More recently:
Scorsese
Tarantino
Miyazaki and other anime directors (Mamoru Hosoda, Mamoru Oshii, Satoshi Kon)
John Woo (although there are some early Hong Kong films, from his comedy phase, that I have yet to see)
Actors:
I saw every Steven Seagal theatrical release either when it came out or later on video, but after he went straight to video, I only saw a couple more.
Bruce Lee (of course)
I've tried to follow Jason Statham diligently.
My favorites from the old days made way too many movies to be able to be much of a completist: Robert Mitchum, John Wayne, Barbara Stanwyck, but I did see a lot of 'em.
It's easier with some of the comedy stars like Mae West, W.C. Fields, the Marx Bros., Eddie Cantor, Abbott & Costello, Bob Hope, etc.
A couple of actors whose careers I'd like to complete before I die, if possible: Alan Ladd, Audie Murphy.

Glenn Ford
Raymond Burr- seems out of left field, he's plays the heavy in a lot of film noirs
and evil Raymond Burr in shadowy black and white is awesome.

I've around 12 of his movies, and own most of them, but yeah I'm the same - want to see them chronologically - need to find the time to do that. I've got his autobiography on my desk as I type this, a very good read.

I own all of Steven Spielberg, Christopher Nolan, and Quentin Tarantino's films on Blu-ray, with the exception of Tarantino's Grindhouse double feature.
