David Caruso - Left "NYPD Blue" to become a star in Kiss of Death and that title should've said everything. He did get a few more opportunities (Jade, Cold Around the Heart and Body Count) but they were all duds. Seems like he floundered around until 2002 when "CSI: Miami" started.
And he should've been nominated along with Philip Seymour Hoffman for Before the Devil Knows You're Dead.
Steady work for the past 30 years and indie cred. Hawke is good at what he does, he don't need super stardom.

Here's one you might not have thought of : Dana Carvey.
Yes, he was in both Wayne's World films and the first did very well, but nobody really gave any box office credit to Carvey; that was Mike Meyer's popularity train all the way. He had a small role in the well-received Road to Wellville in 1994, but didn't actually get a movie built around him and his talents until Master of Disguise in 2002. It bombed badly and he has only one movie credit since (a small part in the disastrously bad Sandler flick Jack & Jill in 2011).

Billy Campbell, who managed to beat out Dennis Quaid, Kurt Russell, Bill Paxton, Emilio Estevez, and Johnny Depp for the lead role in The Rocketeer thanks to the director convincing Disney to go in a different direction.

Carvey also had to drop out of the scene for a while because he had a botched heart surgery in the late 90s and had some serious health issues as a result (he sued for malpractice and settled out of court).

Maybe someone like Michael Pare, who seemed destined for stardom thanks to Eddie and the Cruisers and Streets of Fire, but it never happened. He still works a ton, but all of it B movie stuff, including a bunch of Uwe Boll films.

Carvey can't get a sitcom or a TV show either.
The Dana Carvey show was awesome but nobody watched it.
Bella Heathcote. She was advertised as the next big thing in 2012 and a candidate to play Cinderella until Dark Shadows came out.

I think what hurt Carvey is that he was so good at disappearing into characters on SNL that he didn't have a known persona of his own. It seems that usually the big comedy stars have that.
