Game of Death was reworked to include the footage Bruce Lee shot before his death.

The Knights of Badassdom was famously messed up by producers lying about the budget and Peter Dinkledge being pulled off the set, in the middle of filming, by HBO because he was needed to shoot Game of Thrones.
I thought it seemed like something was wrong with that movie. It just fell apart and was very disjointed.

Sort of counting- the forgettable 1993 football movie "The Program" had a scene cut during its theatrical release (a replacement reel was sent to theaters without the scene) after some dumb kids were killed imitating it- it had characters lying down on the freeway.
Slightly off topic, but ... When that happened, I did a paper on "life imitating art." It is a popular misconception that the kids were imitating the scene in The Program. In fact, that act (lying on the road as cars went by) had been going on in that county for years. The script writer got it from real life.

In Plain Sight on USA wrote in Mary McCormack's real life pregnancy into the final season

Kiefer Sutherland underwent surgery during filming of the 8th season of 24 and they wrote in an injury for Jack which kept his action scenes limited.

Back to the TNT version of Dallas, Hagman died after shooting only a handful of episodes of the second season. So they wrote in his death into the show as a big murder mystery arc.

Jim Davis who played Jock Ewing in the original Dallas died during filming of the third season. They wrote in Jock's death into the show.

Dolph Sweet died of cancer during one of the early seasons of Gimme a Break. His death was written in.

Game of Death as most Bruce Lee fans know was supposed to be an entirely different movie. However, after Bruce died, Robert Clouse constructed a turd of a movie out of the 30-40 minutes of action scenes Bruce shot in 1972.

The list for stuff like this goes on and on.

Eight Diagram Pole Fighter
Alexander Fu Sheng (Star of the movie) died during filming. Gordon Liu was re-written as the hero and the film still became a classic in the genre.

I'm not 100% sure, but I think Simon Yuen died of natural causes during Mystery of Chess Boxing. I say that because it's one of the few (Ol school) kung fu movies where a character rarely dies offscreen.
