Starter Horror Movies
Horror is a genre I've never really watched or been very interested in.
But it seems like there is some cool stuff to be found there and just like with music, I know there is something I'll like in every genre.
So what are some good horror movies to start me on my way?

Hmmm, depends on wether you think you'll like Psychological horror or Blood & Guts horror. I mean if you hate gore no movie is going to make you like it suddenly, at least not in a way that would be safe for your family or neighbors.
So I'm looking through you collection and noticed you have;
From Dusk Till Dawn and you're an obvious Tarantiono fan.
Did you like that? Perhaps just the First half?
You've got a fair amount of Sci-Fi and Anime and overall seem to prefer Big Budget Blockbusters to indie films. Not very many classics either sooooo the horror predictor says.... Cha-chink, cha-chunk, ping, ping, ping....
1. Jaws
2. The Silence of the Lambs
3. The Sixth Sense
4. Aliens
5. Cube
6. Misery
7. Poltergeist
8. Predator
9. Signs
10. The Thing

Well, to start off there's no better way to start than the "classics". I second the vote for "Texas Chainsaw Massacre" and add these to the mix:
Halloween
A Nightmare on Elm Street
Friday the 13th
All the ones mentioned in the other 2 posts are good as well, but I'd classify a bunch of TELawrence's more as thrillers than horror. I think you've got enough suggestions to get started . Enjoy!

Horror movies are great with a nice dedicated Home Theater as the newer movies make use of directional sound. Some of my favorites are
13 Ghosts
The Haunting (DTS Version)
House on Haunted Hill
Interview with a Vampire
Queen of Darkness
Vampire (John Carpenter)
Stigmatica
Lost Souls
Dracula 2000 (Wes Craven)
The Others
Event Horizon
Pitch Black

of Shrouds list;
i'd second
the others
event horizon is horror but has alot of sci-fi, still a decent flick.
pitch black leans more towards sci-fic action, and also a good film.
those others mentioned i'd avoid.

The horror genre is so broad, it's difficult to answer this question succintly. So I've broken my recommendations into categories... some of these films are available in multiple versions or have been remade so I have given companies/years when applicable...
Classic/gothic horrors...
NOSFERATU (1922, Kino)
FRANKENSTEIN (1931, MCA/Universal)
THE HORROR OF DRACULA
THE HAUNTING (1963)
Early modern horrors...
PSYCHO (1960, MCA/Universal)
BLOOD AND BLACK LACE (VCI)
NIGHT OF THE LIVING DEAD (1968, Elite)
THE EXORCIST (original cut)
Contemporary horrors...
HALLOWEEN
ARMY OF DARKNESS (bootleg cut)
SILENCE OF THE LAMBS
THE SIXTH SENSE

I also highly recommended the DTS (Canadian Edition) of "Brotherhood of the Wolf" - the soundlevels are so high and in your face, I practically was scratching the coach while cringing.... and when the attacks occur.... BAM! it quite literally is an ear assault.

In terms of Horror/Comedy: Peter Jackson's Dead/Alive
---
I also recently saw Turner Classic Movie's presentation of The Curse of Frankenstein and really enjoyed it. Scarier and gorier than the original "Frankenstein" IMO.
also Mario Bava's Twitch of the Death Nerve is an excellent introduction to the high body count slasher film (ala Friday the 13th) genre - Italian style.
