Off the top of my head: Primer. It's out of print and hasn't been on Blu-ray but you can get a HD digital copy from ERPB Films' website. Criterion can have a field day gathering the written materials about the film and...more science fiction!

Fuck yes. I'd say a second Miike box set with all three Dead or Alive films plus some great one-offs like The Bird People In China and Agitator would be most welcome.

Would also like to add, Paul Brickman's "Men Don't Leave". A long forgotten little gem of a movie. With great performances by everyone in the cast. I love Brickman's directing style and it's puzzling that he's only helmed two movies in his entire career. This (made in 1990) and "Risky Business" (1983). Giving it more thought, other films I'd like to put on my Criterion wish list would be:

I don't go crazy over Criterion like some people but since the possibility of them releasing Mulholland Drive has been mentioned I'd love to see it on Blu-ray.

Criterion and Shout/Scream Factory have kept me in to collecting. If all we did was rely on the major studios, more than I could imagine would never see the light of day in HD.
