Can someone explain why this is? I thought you weren't losing anything (only gaining) with a WS transfer?

Very simply put: There are several ways to shoot a movie. Some are filmed widescreen to begin with, and there is nothing more to see. Others are filmed in a 4:3 ratio, and the widescreen effect is handled upon projection at the theater (there are little gates that move up and down on the projector that block the top and bottom of the image from getting projected). When a film like that is transferred to video, sometimes they show the whole 4:3 image, without remembering or bothering to frame off the top and bottom. Sometimes it pays off, other times it reveals stuff that was never intended to be seen, like boom mics and other filming aparatus.

Correct me if I'm wrong, but doesn't this not really happen anymore due to monitors? In behind-the-scenes footage, I often see people looking at playback monitors with both a square and a rectangle on the screen; unless I'm mistaken, I thought that was so the picture could be properly framed for both widescreen and fullscreen, and avoid showing boom mics, lighting and accidental male/female nudity.

In addition to that, if something were to accidentally peek out in the full-screen transfer, these days the framing of that shot will often be adjusted after-the-fact by zooming in on all sides, or parts of the frame can be painted out digitally.

People often erroneously use Terminator 3 as an example of a recent movie with extra boobage in the open-matte transfer, but in fact there is no true nudity in any version of the movie. The actress's breasts are covered by hair. All the full-screen disc offers is some extra cleavage.

I thought I remember reading that there was a tad bit more nudity in the FS version of 'Doc Hollywood'?

"Who's Harry Crumb?" -- during the opening credits when the woman is getting ready for the spa, in the FS you can see her nipples in the mirror (at least in the foreign version, see link). Noteworthy because this was otherwise a tame PG-13 movie.

I'm not aware there's ever been a WS DVD release of Doc. I have both the DVD and the WS LD - on the later you can see more of Julie Warner coming out of the lake.

Yes and no. You can see more of her lower half but you also notice she's wearing undies.
