Not a theatrical movie, but the sequel to Walker Texas Ranger: Trial by Fire was cancelled even though it ended on a huge cliffhanger. This was the big reunion movie 4 years after the show ended. The ratings weren't great because live sports pushed it back and CBS cancelled the Sunday TV movie of the week. Chuck Norris had wanted to make a new Walker tv movie every year.
Also Delta Force 3 starring Norris was also cancelled because Norris pulled out after some stuntman was killed filming Delta Force 2. 3 was later re-developed as a low budget DTV movie with Norris' son Mike.
And yes I was looking forward to both.

I've always been a fan of Terminator: Salvation and would have been curious to see how the sequels would have played out (it was originally supposed to be the start of a trilogy). Also as much as I hate Batman Returns I'd have been curious as to how Burton's next Batman film would have been.

Really wanted to see Singer's sequel to SUPERMAN RETURNS. I was sorry to hear that the whole thing was being rebooted, and even sorrier to see the results which became MAN OF STEEL.
I wouldn't have minded seeing another Raimi SPIDER-MAN, especially given all the life-effecting events of SPIDER-MAN 3.

Off the top of my head:
-Batman Triumphant: Yes Batman and Robin was an abomination but I'm still curious what Schumachers serious movie for Bat fans would have been like.
-Green Lantern 2: Again the first sucked but I'm curious what direction the sequel would have taken.
-The third Timothy Dalton Bond: I think Dalton was really underrated as 007.
-True Lies 2: Loved the first one and was looking forward to the sequel until Cameron cancelled it after 9/11.

Gladiator 2, because Nick Cave's script was just so batshit nuts.
Master and Commander 2, because I don't want to live in a world in which there are four Pirates of the Caribbean movies and only one Master and Commander.
John Carter 2, because if they're going to make Avatar 2 and Avatar 3 and Avatar 4, then why the hell not.
Ghostbusters 3, not because I want to see it, but because I want the internet to collectively shut the fuck up about this movie already.

A lot of concept art for King Kong vs. Frankenstein still exists. The story behind this one is pretty interesting; Universal sold it to Toho, who split it up into two different movies: King Kong vs. Godzilla and Frankenstein Conquers the World.
