Confused about Composite vs. S-Video

I am about to buy my first DVD player (pause for applause), and I am a little bit confused about the cables. My 27 inch TV only has composite inputs, and I am wondering how big of a deal that is.
I have a couple of questions:
-How exactly is s-video better than composite (scan lines, color, contrast, etc)?
-What does an s-video converter do? I thought that one of the differences is that if you have an s-video input on your TV you bypass the filter. So if the cable goes out the s-video on the DVD player, and then still goes into the RCA plug on the TV, what does the converter do?
