I've seen this comment several times now from reviewers and posters: "...but there was definitely a loss in overall quality when the show was compressed from 48 discs to 26."

Where is the rationale for thinking this, just because the number of disks were lowered? Did you actually compare them to the Starburts edition or just figure the reduction in disk count would cause this? What file size or bitrate difference was there from the Starburst edition to the new A&E edition?

I bring this up because I was always curious as to why it took so many disks in the Starburst editions. The remastered Star Trek TOS series disks support 4 one hour episodes each, which is the same as Farscape. Are the Star Trek episodes overly compressed as a result? Because they seem to look fantastic.

The episodes never looked exceptional ever. Taking of more disk space then the Star Trek episodes is not going to change this. If you have concrete evidence that shows they have been compressed more then the Starburst editions then you should share it.
