Does anyone know of composer commentaries on standard DVD or HD DVD's.

I appreciate any help.

The only one I can think of at the moment is City of Angels.

Danny Elfman does quite a bit of audio commentaries. I think Matrix has one also.

Most all of these are incorporated into an isolated score track:

Marco Beltrami - I, Robot CE
Howard Blake - The Duellists
Terence Blanchard - Love & Basketball
Carter Burwell - Book of Shadows: Blair Witch 2(only select scenes)
Bruno Coulais - The Crimson Rivers(on the R2, I dunno about the R1)
John Debney - The Passion Of The Christ SE(pretty good, but repeats much of what was discussed in his FilmScore Monthly interview)
Elliot Goldenthal - Final Fantasy: The Spirits Within, Frida, & Titus(this is the best composer commentary I've heard)
Mark Isham - Blade
Michael Kamen - Frequency & Robin Hood: Prince Of Thieves
Joe Kraemer - The Way of the Gun
Lyle Lovett - Dr. T and the Women
Cliff Martinez - Traffic CC
Randy Newman - Pleasantville
John Ottman - Phone Booth
Trevor Rabin - The 6th Day SE
David Raksin - Laura
Lalo Schifrin - Rush Hour SE
Shirley Walker - Final Destination
Gabriel Yared - City of Angels
"The Angel" - Boiler Room

His commentary on Pee Wee's Big Adventure is a pretty good listen. What I like even better is that it's a hybrid of a commentary and an isolated soundtrack; Elfman only talks over segments of the film were none of his music plays while during the scored segments, only the music can be heard.

I am pretty sure John Ottman also did a commentary on The Usual Suspects (he also was editor on that film I believe).

Another nod for Elfman's "Pee Wee" track. I recall that standing out more than Burton's track on that disc. Also, I'll second the Goldenthal "Titus" track as well.

Give this link a look:

Rate That Commentary

You can also go there and search for things like editor, screenwriter, producer, director, or anything else you'd like to search for.
