1. Can anyone recommend DD 5.1 Headphones or should I just buy really good Stereo Headphones? I need them for movie watching on my HDTV (or computer) since I can't blast my home theater anymore since I have an infant that goes to sleep at 8 PM.

2. And for the people that have DD 5.1 Headphones, do any of them that have the single wire to plug in directly to a CD player, Computer, TV, or DVD receiver? Or do they all have the three wire ends and need other parts too?

3. Can anyone recommend some really good (but inexpensive) Stereo headphones that seem like pseudo DD 5.1 (good directionals, bass, and not much hiss) for watching movies on TV or computer?

If I were you, I'd invest in some good stereo cans. I really haven't heard any simulated surround sound speakers that didn't sound "off" to me. Yamaha receivers have a virtual surround headphone option that is the closest I've heard. Almost bought one because of it.

PowerDVD (and WinDVD I believe) support Dolby Headphone, which simulates surround sound in headphones.
