Ok, it doesn't quite match your criteria exactly, but
Ender's Game and it's follow-up Speaker for the Dead were both written by the same Mormon and they're both fantastic. Also, they're Science Fiction. Author is Orson Scott Card.

If we are going away a little from the original spec - looking at science fiction with a mormon flavour generally and OSC in particular - Card wrote a couple of series said to have mormon themes runing through them i.e. the Alvin Maker books and the Homecoming series.

^^I would imagine one is looking to have a good time reading some fiction that reflects their values or at least don't trample all over them. Perhaps it is for reinforcing Mormon beliefs in their children. A lot of our fiction is pretty loose on what value systems they reflect.
