Dolby Digital EX and DTS ES x DVD Player
With those new audio formats that enables having 5.1, 6.1 and even 7.1 surround formats, do the DVD Players requires special features?
Or just the Digital Audio Coaxial or Optical output is enough?

These really aren't new. And yes, the current SPDIF outputs are perfectly capable of handling any compressed audio format. Only DVD-A and SACD are not supported on SPDIF.

Depends on the recording and your equipment. And your ears, which means nobody can answer that question for you.
Although, an actual recorded 6.1 track is almost always better than the 5.1 version. There is no 7.1 recorded, yet.
