Maybe
Spoiler:
Cousteau's
name is somehow copyrighted? I have no idea why they'd bleep out any mention of the name
Spoiler:
Cousteau.

I don't understand what you mean. Are you saying that his name isn't bleeped out on the commentary track of your copy? Or that it manages to escape being bleeping once? There's no way this is some sort of broken audio track on my dvd. This is deliberate. And, since I haven't seen any discussion of this issue, I was wondering why the studio did it.

Does anyone actually know?

He's talking about the part Cousteau's name is metioned in the actual movie, not the commentary. It's beeped out over the entire commentary, no idea why.

Because he's French. Duh. Would you like more Freedom Fries with your DVD?

If his name is bleeped... how do you know that's what they're saying?

Maybe they're saying "Beatrix"

That'd be funny if that was the reason.

Of course, it isn't. And it would be more pathetic than funny.

There's that blurb at the end acknowledging him for being an inspiration, but maybe they bleep his name out of the commentary for legal reasons because there is some admission that Zissou was originally more of an outright copy.

After all, they even say that in the early drafts of the scipt the character was called Steve Cousteau. It might just be lawyers being ultra careful that Cousteau's estate has no grounds for a suit.

Or it could just as easily be Anderson messing with people.
