There's that blurb at the end acknowledging him for being an inspiration, but maybe they bleep his name out of the commentary for legal reasons because there is some admission that Zissou was originally more of an outright copy.
After all, they even say that in the early drafts of the scipt the character was called Steve Cousteau. It might just be lawyers being ultra careful that Cousteau's estate has no grounds for a suit.
Or it could just as easily be Anderson messing with people.
