Edward Fox from The Day of the Jackal or Jean Reno from The Professional, although Leon Lai from Fallen Angels is a sentimental favorite.

Gotta go with some of the Bond films on this one:
Jaws from THE SPY WHO LOVED ME
Red Grant from FROM RUSSIA WITH LOVE
Xenia Onnatopp from GOLDENEYE
Scramanga from THE MAN WITH THE GOLDEN GUN
Mr. Wint & Mr. Kidd from DIAMONDS ARE FOREVER
These aren't "realistic" hitmen/hitwomen to be sure, but they sure are entertaining and memorable characters.

It took pretty much all the security in France to take him down.

I still vote for Tom Cruise's portrayal in Collateral.
Filmakers can make hitmen seem superhuman but Tom Cruise was more believable in disarming people with his charisma and the emotional detachment needed in order to execute people at will. The gunfights were as realistic as movies get these days and Tom was trained by a former SAS guy in weapons handling and close quarters combat. Shooting from retention, reloads, proper stance, proper grip, controlled double taps etc. Its refreshing to see an actor who looks like he knows how to handle a real gun instead of a toy.
As entertaining as "superhuman" hitman as Jean Reno or Anne Paurillard is in La Femme Nikita I guess I kinda prefer a more realistic approach.

I know you don't mention the Jackal as a sort of "superhuman" hitman but the way he set everything up and the fact that he was targeting a well known and well protected leader of a country who already had assasination attempts against him that had failed made him a superior character for me. It's one thing to knock off a few businessmen etc. but completely another to try and almost pull off knocking off the leader of a country. (And unfortunately, I know the above sounds a lot like arguing about who's stronger, Tarzan or The Phantom)
John Malkovich's portrayal of an assasin in In the Line of Fire was very good as well.
