Any bass solo by Victor Wooten (Bela Fleck and the Flecktones). His "Amazing Grace" solo on the album Live Art is truly something to behold. This guy is crazy!

You guys will probably puke but I always found the little bass break in Paul Simon's "You Can Call Me Al" a nice little addition to an ok song (definitely not th ebest rtack on Graceland by a long shot)
ETA: And N.I.B. is a good pick. That was the centerpiece of my band from high school. Even after we ditched the all-covers set and wrote our own crap we kept N.I.B. What a killer song.

I don't know if you would really consider it a solo, but during Alex's solo in Limelight...it seems like Geddy is doing one of his own...amazing.
