I got the boxset today that has both the original 1931 version, and the 1981 version. should I watch one or the other first?

They really are two distinctly different movies. Yes they have the same premise and some similar plot elements, the rags to riches to dust story of a gangster they have the same title. If the '83 version were called Fush Yo Mang you would never think of it as a remake of the Muni/Hawks classic.
So, it doesn't really matter but watch the Hawks version first.
