Helmut Berger in The Beast Witha Gun. The movie is medicore and its low budget shows but his scenery chewing performance is great fun to watch. IMHO he raises it above medicore to good.

Morgan Freeman is the king at saving mediocre movies (High Crimes, Deep Impact, Kiss the Girls, Hard Rain, Along Came a Spider) in my book, though he finally failed with Dreamcatcher.

Another vote for Daniel Day-Lewis in GONY. While not exactly able to save movies, anytime Christopher Walken makes an appearance he pretty much elevates it to another level for the time he is on screen (even Meet Joe Dirt).

I think Lawrence Fishburn turned The Matrix into a better film. Most other actors in his situation might have overpowered Keanu Reeves, but he played Morpheus with great restraint and let Keanu react more naturally.
(Of course, only as naturally as 'woah' allows...)
