Mine are Peter Gabriel's SO and US albums. They both have a rather soothing sound even when they have faster songs. I am particularly fond of Red Rain and In Your Eyes.

I like to go to sleep listening to Sasha & Digweed. When I am in a lighthearted mood, I like cruising around in my car listening to Massive Attack.

If I just want to relax and wind down it's either anything by Diana Krall or George Strait.

Kind of Blue, Miles Davis. Best piece of recorded music ever, if there is such a thing.

I have a ton of albums to put up for this thread...so I'll pick a few-

Yo-Yo Ma Solo
Anything by Rachmaninoff
Elysian Fields- Queen of the Meadow and Bleed Your Cedar
Tenchu Game Soundtrack
Avalon OST
Escaflowne OST and the Movie OST
Portishead
Mazzy Starr
Most John Coltrane
Most Miles Davis
Pretty much any Beethoven Piano Sonata
Samuel Barber - Adagios
Mozart- Adagios
Edward Grieg- Adagios
(sense a pattern on the orchestral adagios here?)

and so many more...

Ditto to all said above about Miles Davis' Kind of Blue.

Probably the greatest collection of musicians on a single album... and mighty relaxing too.
