I sometimes think I've been living in a coma dream for the last ten years, and since my brain isn't creative enough to come up with new shows, it just grabs shit from my childhood and whips up a shitty re-boot/Netflix revival.

Curb Your Enthusiasm never officially ended, Larry David has basically always left the door open he just does it as he wants.

Is the Tick a reboot of the tv show or just another adaptation of the comic?
I know you excluded cartoons but there are a ton (if you consider adaptations of source material): transformers every few years, tmnt, Dragon Ball, Sailor Moon, Naruto, My Little Pony, Samurai Jack, Young Justice, Thundercats, Avatar.
Also Mystery Science Theater, Hawaii 50, V the series, Miami Vice.

I was at last years Fresh Prince Converntion. I didn't hear anything about a reboot/reunion from the creators and producers present.

Hollywood has gotten very lazy in a crowded marketplace.
Add The Munsters to the list, coming soon.
I wouldn't count the X-Files since it's little more than a direct continuation of the original show. Its comeback is more organic than the others.

This is true of most entertainment: TV, movies, comics, video games, etc. Sequels/continuations at least have a built in audience as opposed to creating a brand new IP, even if there's little resemblance to the original or need to link them. I don't watch One Day At a Time but it seems completely different from the original.

There were news stories last year that a Fresh Prince reboot was going to happen with Will Smith producing.
Sometime later Smith said it wasn't going to happen, but I never saw that until now, so, no, I guess it won't be.

Knight Rider aired in the 2008-09 season after a Made for TV movie aired as it's Pilot in early 2008.

Also, thread has kind of fallen off track. Some of the reboot shows mentioned here ended or were cancelled years ago. Bionic Woman for example was cancelled 10 years ago. Melrose Place ended 8 years ago. Knight Rider was also cancelled 8 years ago. If you want to get nit picky, they weren't recent as the thread title asks.
Beauty and the Beast on The CW was a re-imagining of the 80s CBS series. It lasted 4 seasons. It ended just last year (2016)
The Returned on A&E was a 2015 English language reboot of a French series.
S.W.A.T. is airing on CBS this November. It's a reboot of the 2003 movie and old ABC TV series.

The problem is that creating an entirely new property takes time to build an audience on television. Rarely does a completely new show get big ratings from the beginning in today's overcrowded television space. So many famous hit shows from the past would have never made it past their first season today, including mega-hits like Seinfeld. So we get endless rehashes and reboots of familiar series, even if the reboots have little to do with the original series.
The broadcast networks are not interested in airing anything today that doesn't immediately pop in the ratings. Cable channels have more leeway, which is why they almost always go in with the idea that any new show will get at least two seasons. It's why I was shocked that The Exorcist came back for a second season. Fox is taking a gamble that its audience grew from binging since the first season ended.

Hate to nitpick, but I don't think "reboot" is the right word here. A reboot is when an existing TV or movie series is restarted, usually with new actors, characters and\or setting. A&E's version of The Returned was just an English-language remake of Les Revenants. AFAIK, the original show was only a year, maybe 2 years old when the remake went into production.
